Rice and Beans

It’s funny how we make our little vows.

When we were thinking and dreaming about what this transition would be like from Navy to mission interns at our church, we were fearing all kinds of changes like the possible shift from a somewhat comfortable salary to one that pinched us a little more. The first thought that came to my mind was how will this affect grocery money? For those of you who know us, we LOVE food and anything that has to do with it. Anyways, one of my new passions is cooking—-and the food channel, so I was really scared that we may be living on rice and beans, and well rice and beans doesn’t sound all that fancy or interesting to me. In fact it sounds plain and boring and not very appetizing at all. So here came my little vow, “I cannot live if we have to just eat rice and beans all the time.”
Tonight I scavenged the cupboards to try and make a quick, cheap and easy dinner for our family. We haven’t stocked up on much since our trip home so our pantry is a little barren, but rice and beans we did have, so we ended up having them over corn tortillas. As Adley was scarfing them down, happy as a lark, my mommy heart swelled as it always does when my children love what I make them. I suddenly remembered my vow and then thought of my heavenly father who saw fit to not only give rice and beans but also joy, satisfaction and pleasure while eating them. So, bring on the rice and beans anyday!

RECIPE:
1/2 cup uncooked rice cooked to package instructions (add a TBL of butter while cooking)
1 can Busch’s seasoned dark red kidney beans drained
2 cups sharp cheddar cheese grated
iceburg lettuce shredded
8 corn tortillas (still in a bag unfried)
Taco sauce

1. Cook your rice
2. Drain beans and set aside
3. Grate cheese and shred or cut lettuce up finely and place in separate bowls
4. Place an inch of oil in a skillet. Heat until hot and add 1 corn tortilla. Cook on each side for about 10-12 seconds until they bubble up. Place on paper towel to drain.
5. Add rice, beans, cheese, lettuce and sauce on tortilla. Fold up and eat away!
(for the girls I just put the rice, beans and cheese in a bowl and they loved it)
